From July 20 through July 31, ENVY The Steakhouse located at the Renaissance Las Vegas Hotel, presents its monthly Epicurean Wine Dinner. This month’s dinner packages feature a selection of premier rosé wines.

A delicacy from the lower Loire Valley of western France with their fruity aromas and flavors, rosés have gained popularity throughout the rest of the world and have recently re-emerged as a fashionable wine. ENVY will pair several varieties of rosé wines with a complementing four-course meal. The paired dishes will include watermelon on a bed of spring mix topped with prosciutto and candied walnuts, served with a vinaigrette. The second course will include curried seafood soup with coconut red curry and Jasmine rice, followed by a choice of stuffed tenderloin or grilled Tuscan veal chop. The dinner will be topped off with a white chocolate and raspberry tartlet.
French for pink or rose-colored, rosé wines are known as blush wines in North America . The rosy pink color is achieved by draining the juice from the grape skins during fermentation instead of allowing the juice to stay in contact with the skins as with red wines. Rosés are known for having low to medium-alcohol and are slightly sweet. After World War II, rosés grew in popularity allowing for the creation of renowned brands such as Mateus. New variations using grapes found in regions stretching from Provence, the Languedoc and Australia ensure that rosés wines will remain an exhilarating drinking experience.

* Wines from Hungary, November 16 – 30
* Champagne featuring Louis Roederer, December 7 – 31
